Panzanella is my new favorite summer salad. So many fresh garden tomatoes, onion, garlic, basil, olive oil & temporarily crunchy bread. What's not to love?
Thank you so much to Tracy Beck for sharing her recipe with us!
Ingredients:
Italian, ciabatta, or that type of bread
Tomatoes
Onion
Basil
Parmesan
Olive Oil
Balsamic or red wine vinegar
Garlic
Salt & pepper
Directions:
Cut bread into 1-2in cubes, toss in olive oil, salt and pepper, and toast in the oven on a cookie sheet
Toss bread cubes with cubed tomato, sliced onion, lots of basil, grated Parmesan
Mix dressing of olive oil, balsamic or red wine vinegar, fresh minced garlic, salt and pepper
Combine salad with dressing Note: If bringing somewhere, bring ingredients separately. It's better when the bread doesn't get too soggy.
