Buttermilk Lard Biscuit

Don't let the name scare you, these are a simple and delicious side that are constantly in our meal rotation.
They have 6 ingredients, take 10 minutes to put together and 14 minutes to bake. They can be used as a side to soak up juices, a snack with butter and honey or jam, mini sandwich bread, or as a delicious base for strawberry shortcake
Ingredients:
1 cup buttermilk. If you’re like me and don’t have buttermilk in your fridge: put 1 T lemon juice (or white vinegar) in a liquid measuring cup and fill with milk to the 1 cup line
6 Tbl very cold leaf lard
2 cups flour
1 Tbl baking powder
1/4 tsp baking soda
1 1/4 tsp kosher salt
Directions:
Preheat oven to 450°F
Sift together flour, baking powder, baking soda and salt
Cut in lard (I use a pastry cutter, but 2 butter knives work fine) until lard is pea size or smaller
Add buttermilk*, mix minimally
Turn out on a well floured surface, pat down (No rolling pins allowed) to 1/2”, fold in 1/2, repeat the process 6 times adding flour liberally as needed
Cut 3” biscuits (you can use a glass as your cutter) nestle in high sided metal pan. Bake for 12-15 minutes at 450°F (you can brush tops with butter for a more glossy brown top, I never bother with this step).
*if you’re like me and never have buttermilk on hand: put 1 T lemon juice or white vinegar into a 1 cup measure and fill the measuring cup with milk to 1 cup. Use that. It’s that simple!
